Eat Well Recipe: Turkey and Cranberry Lettuce Wraps

Turkey and Cranberry Lettuce Wraps

These crisp, refreshing lettuce wraps combine lean, savoury turkey with tart dried cranberries, crunchy walnuts, and a zesty herb dressing. Light yet deeply satisfying, they offer a nutrient-packed meal designed to support cardiovascular wellness and keep your heart healthy.

Ingredients

  • 1 lb lean ground turkey or finely diced cooked turkey breast (an excellent source of lean protein with minimal saturated fat)
  • 1 head of butter lettuce or romaine lettuce, leaves separated, washed, and patted dry (serves as a crisp, low-carbohydrate wrapper)
  • 1/3 cup dried cranberries (adds a burst of sweet-tart flavour and antioxidants)
  • 1/3 cup chopped walnuts (rich in alpha-linolenic acid, a plant-based omega-3 fatty acid that supports heart health)
  • 1/2 cup celery, finely diced (adds a refreshing crunch and dietary fibre)
  • 1/4 cup red onion or green onions, finely chopped
  • 2 tbsp extra-virgin olive oil or avocado oil
  • 2 tbsp Dijon mustard or plain Greek yogurt (creates a creamy, flavourful binder without heavy mayonnaise)
  • 1 tbsp fresh lemon juice or apple cider vinegar
  • 1 tsp fresh thyme or rosemary, minced
  • Sea salt and freshly cracked black pepper to taste

Instructions & Method

  1. Cook the Turkey (if using ground): If using raw ground turkey, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the ground turkey, season with salt, pepper, and thyme, and cook for 6 to 8 minutes, breaking it apart with a wooden spoon until fully browned and cooked through. Remove from heat and let it cool slightly. (If using cooked diced turkey breast, skip this step).
  2. Toast the Walnuts: In a dry skillet over medium-low heat, toast the chopped walnuts for 3 to 4 minutes until fragrant, stirring frequently to prevent burning.
  3. Mix the Dressing: In a small bowl, whisk together the remaining olive oil, Dijon mustard (or Greek yogurt), lemon juice, sea salt, and black pepper.
  4. Combine the Filling: In a large mixing bowl, combine the cooked turkey, dried cranberries, toasted walnuts, diced celery, and chopped red onion.
  5. Dress the Mixture: Pour the prepared dressing over the turkey mixture and toss gently until everything is evenly coated and well combined.
  6. Assemble the Wraps: Spoon generous portions of the turkey and cranberry mixture into the centre of each cleaned lettuce leaf.
  7. Serve: Arrange the finished wraps on a serving platter and enjoy immediately as a light, refreshing meal.

Tips for Success & Heart Health

  • Prioritise Lean Proteins: Ground turkey breast is an exceptional lean protein choice that helps maintain muscle mass while keeping your intake of saturated fats low, which is crucial for maintaining healthy arteries.
  • Harness Walnut Omega-3s: Walnuts are uniquely rich in plant-based omega-3 fatty acids (ALA), which help reduce systemic inflammation, lower blood pressure, and protect against cardiovascular events.
  • Swap Heavy Mayonnaise for Olive Oil or Yogurt: Traditional chicken or turkey salads are often loaded with heavy, calorie-dense mayo. Using extra-virgin olive oil or plain Greek yogurt introduces beneficial fats and probiotics while reducing unnecessary saturated fats.
  • Load Up on Antioxidants: Cranberries and leafy greens contain powerful polyphenols and vitamins that combat oxidative stress and promote flexible, healthy blood vessel function.
