Cardamom Butter Krumkake is an exquisite fusion pastry that bridges traditional Norwegian holiday baking with Himalayan richness. Krumkake is a beloved Scandinavian waffle cookie traditionally baked in a decorative iron, then quickly rolled into a delicate, crispy cone while still piping hot.


By infusing the golden batter with aromatic ground cardamom and filling the crisp, flaky shell with a velvety cream made from churned yak butter (or a rich, grass-fed butter alternative) and powdered sugar, this treat transforms into a luxurious confection. It offers an incredible interplay of delicate, shatteringly crisp pastry and a rich, spiced, melt-in-your-mouth centre.


Ingredients

  • For the Krumkake Shells:
    • 2 large eggs
    • 1/2 cup granulated sugar

    • 1.5 cups powdered sugar
    • 2 tablespoons heavy cream or whole milk
    • 1 teaspoon vanilla extract or a pinch of ground cardamom

Instructions & Method

  1. Whisk the Batter Base: In a mixing bowl, beat the eggs and granulated sugar together until pale and slightly fluffy. Whisk in the melted butter and vanilla extract.
  2. Incorporate Dry Ingredients: Sift in the all-purpose flour, potato starch, ground cardamom, and salt. Stir gently until a smooth, pourable batter forms. Let it rest for 10 minutes.
  3. Bake the Waffles: Preheat your krumkake iron (or electric krumkake maker). Drop about a tablespoon of batter onto the centre of the grid, close tightly, and bake for 30 to 60 seconds until lightly golden brown.
  4. Shape Quickly: While the wafer is still hot and pliable straight off the iron, immediately peel it off and wrap it tightly around a wooden cone form. Hold it for a few seconds until it cools and sets into a rigid cone shape, then slide it off to cool completely.
  5. Make the Filling: In a stand mixer, beat the softened yak butter until creamy and smooth. Gradually add the powdered sugar, heavy cream, and vanilla, whipping on medium-high speed until light, fluffy, and pipe-able.
  6. Fill and Serve: Transfer the spiced yak butter cream into a piping bag fitted with a star or round tip. Pipe the cream generously into the cooled krumkake cones just before serving.
