Fusion Recipe: Gà Quay Rôti
Gà Quay Rôti (Vietnamese Rotisserie-Style Roasted Chicken) is a beloved comfort dish that balances savoury depth, subtle sweetness, and warm aromatic spice. Marinated in coconut water, garlic, shallots, five-spice, and dark soy, the chicken absorbs rich caramelised flavours while staying irresistibly tender and juicy on the inside. As it roasts or pan-glazes to perfection, the skin turns a glossy mahogany brown, offering a mouthwatering contrast of sweet-savoury glaze, crispy edges, and succulent meat.
Ingredients
- The Chicken:
- 1 whole chicken (about 3–3.5 lbs / 1.5 kg), cut into large bone-in pieces (quarters, thighs, and drumsticks work best)
- Aromatic Marinade:
- 3 cloves garlic, finely minced
- 2 shallots, finely minced
- 1½ tablespoons dark soy sauce (for rich colour)
- 1 tablespoon regular soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 1 tablespoon honey or palm sugar
- ½ teaspoon Chinese five-spice powder
- ½ teaspoon ground black pepper
- 1 tablespoon cooking oil
- Braising & Glazing Liquid:
- 1½ cups fresh coconut water (or coco soda like Coco Rico)
- 1 tablespoon butter (optional, for finishing glaze)
Instructions & Method
- Prepare and Marinate the Chicken:
Pat the chicken pieces thoroughly dry with paper towels. In a large bowl, mix the minced garlic, shallots, dark soy sauce, regular soy sauce, fish sauce, oyster sauce, honey, five-spice powder, black pepper, and cooking oil. Rub the marinade evenly over and under the chicken skin. Cover and refrigerate for at least 1 to 2 hours (overnight yields the best flavour). - Sear for Colour (Pan-Searing Method):
Heat 1 tablespoon of oil in a wide, heavy-bottomed skillet or Dutch oven over medium-high heat. Scrape off excess minced garlic/shallots from the chicken pieces to prevent burning. Place the chicken skin-side down in the pan and sear for 4–5 minutes until the skin turns a rich, golden mahogany colour. Flip and sear the other side for 2 minutes. - Braise in Coconut Water:
Pour the fresh coconut water into the skillet around the chicken, along with any remaining marinade from the bowl. Bring to a gentle boil, then turn the heat down to medium-low. Cover partially and simmer for 20–25 minutes, turning the chicken occasionally so it cooks evenly and absorbs the coconut sweetness. - Reduce and Glaze:
Remove the lid and increase the heat slightly. Let the liquid reduce into a thick, glossy syrup, basting the chicken continuously with the glaze as it bubbles down. Stir in the butter at the very end to give the chicken an irresistible shine and velvety finish. - Serve:
Transfer the glossy chicken pieces to a platter, spooning the extra caramelised pan juices over the top. Serve hot with steamed jasmine rice, cucumber slices, fresh coriander, and tomato wedges.
Tips for Best Results
- Use Fresh Coconut Water: Coconut water is the secret ingredient in traditional Vietnamese Rôti; as it simmer-reduces, its natural sugars caramelise, creating a tenderising braise and a distinct, fragrant glaze without being cloying.
- Watch the Heat During Searing: Because the marinade contains honey and soy sauce, watch the heat carefully when searing so the skin turns deep brown rather than scorched.
- Keep the Skin On: Bone-in, skin-on thighs or quarter leg pieces yield the juiciest results and hold onto the shiny, sweet-savoury glaze best.
