Fusion Recipe: Macanese Pâté Chaud with Paprika Butter

Macanese Pâté Chaud with Paprika Butter

Macanese Pâté Chaud with Paprika Butter is a vibrant, savoury fusion combining the delicate art of French pastry with the punchy, aromatic spice palette of Macanese heritage cuisine. Flaky, golden layers of puff pastry—brushed with a smoky, vibrant paprika butter—encase a rich, spiced filling of minced pork, shallots, garlic, and Macanese seasoning. Biting into one yields an immediate shatter of buttery, paprika-infused crust followed by a warm, savoury, and subtly spiced meat filling that melts in your mouth.

Ingredients

For the Filling:

  • Minced Meat: ¾ lb (350g) ground pork (or a mix of ground pork and beef)
  • Aromatics: 2 shallots & 3 cloves garlic, finely minced
  • Seasoning:
    • 1 tablespoon soy sauce
    • 1 tablespoon oyster sauce
    • ½ teaspoon smoked paprika
    • ¼ teaspoon ground white pepper
    • ½ teaspoon sesame oil
    • 1 teaspoon cornstarch (to bind moisture)
    • 1 egg white (save the yolk for egg wash)

For the Pastry & Smoked Paprika Butter:

  • Puff Pastry: 2 sheets all-butter puff pastry (thawed but cold)
  • Smoked Paprika Butter:
    • 3 tablespoons unsalted butter, melted
    • 1 teaspoon smoked sweet paprika
    • Pinch of sea salt
  • Egg Wash: 1 egg yolk whisked with 1 tablespoon milk

Instructions & Method

  1. Prepare the Filling:

In a mixing bowl, combine the ground pork, minced shallots, garlic, soy sauce, oyster sauce, smoked paprika, white pepper, sesame oil, cornstarch, and egg white. Mix vigorously in one direction until the meat becomes sticky and cohesive. Cover and chill in the refrigerator for 20–30 minutes to marinate.
  2. Make the Paprika Butter & Cut Pastry:

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper. Whisk together the melted butter, smoked paprika, and sea salt in a small bowl. Roll out the puff pastry sheets lightly on a floured surface and cut out round circles using a 3-inch (7.5cm) biscuit cutter (you will need roughly 12 to 16 rounds).
  3. Assemble the Pâté Chaud:

Brush a light layer of paprika butter over half of the pastry rounds (these will be the bottom bases). Spoon roughly 1½ tablespoons of the chilled meat filling into the centre of each bottom round. Brush the edges with egg wash. Place a top pastry round over each filling, pressing gently around the edges to seal out air pockets. Use a fork to crimp the edges tightly or use a slightly smaller round cutter to press and trim clean edges.
  4. Brush and Bake:

Brush the tops generously with the egg yolk wash, then lightly brush with the remaining smoked paprika butter for an extra golden, aromatic finish. Prick a tiny hole in the top of each puff with a toothpick to let steam escape. Bake for 20–22 minutes until the pastry is puffed high, shatteringly crisp, and deep golden brown.
  5. Serve:

Transfer to a wire rack to cool for 5 minutes. Serve warm as an appetiser or savoury tea-time snack.

Tips for Best Results

  • Keep Pastry Cold: Always work with chilled puff pastry. If the butter inside the pastry melts before baking, you will lose those dramatic, flaky puff layers.
  • Crimp Edges Securely: Make sure to seal the edges tightly around the meat filling so the savoury juices do not leak out onto the baking tray.
  • Quality Smoked Paprika: Using high-quality Spanish smoked paprika (Pimentón) gives both the pastry crust and filling its signature reddish tint and warm, smoky Macanese aroma.
