Fusion Recipe: Patbingsu Mishti Doi

Patbingsu Mishti Doi

Patbingsu Mishti Doi is a sublime fusion dessert that marries the frosty, refreshing crunch of Korean Patbingsu shaved ice with the rich, caramelised, earthenware-baked creaminess of Bengal’s beloved Mishti Doi (sweet yogurt). As you dig in, you experience a delightful temperature and texture contrast: icy, sweetened red beans and crushed soft rice cakes (tteok) meld into a velvety, caramel-tinted yogurt syrup that is subtly tangy, deeply milky, and luxuriously sweet.

Ingredients

  • The Yogurt Base:
    • 2 cups Mishti Doi (Bengali sweet yogurt, chilled) or store-bought thick Greek yogurt mixed with 3 tablespoons condensed milk and 1 tablespoon date palm jaggery syrup.
  • The Shaved Ice / Base Layer:
    • 3 cups fine shaved ice or finely crushed ice cubes
  • The Sweet Bean Topping (Pat):
  • Chewy Elements:
    • ½ cup mini glutinous rice cakes (injeolmi or small tteok pieces), or soft rasgulla chunks squeezed free of syrup
  • Crunch & Garnish:
    • 2 tablespoons crushed roasted almonds, pistachios, or cashews
    • A drizzle of Khejur Gur (date palm jaggery syrup) or condensed milk
    • Fresh mint leaves or a sprinkle of dried rose petals (optional)

Instructions & Method

  1. Chill the Bowl:

Place your serving bowls or dessert glasses in the freezer for 10–15 minutes beforehand. A cold bowl prevents the shaved ice from melting too quickly.
  2. Build the Ice Base:

Fill each chilled bowl generously with fine shaved ice or crushed ice, creating a small mound.
  3. Drizzle the Mishti Doi:

Generously spoon or pour the chilled Mishti Doi right over the mound of shaved ice so it drips down the sides like a creamy glaze.
  4. Add the Sweet Beans and Chewy Toppings:

Spoon a generous amount of sweet red azuki beans onto the centre or side of the shaved ice. Arrange the chewy mini rice cakes (or soft rasgulla pieces) artfully around the beans.
  5. Garnish and Finish:

Scatter the crushed roasted nuts over the top for a contrasting crunch. Drizzle a little extra date palm jaggery syrup or condensed milk across the dessert for an extra touch of sweetness and shine.
  6. Serve Immediately:

Serve with a long-handled spoon. For the best experience, mix everything together gently so the creamy Mishti Doi coats the shaved ice and toppings with every spoonful!

Tips for Best Results

  • Keep Everything Chilled: Because this dessert features shaved ice, ensure your Mishti Doi, beans, and serving bowls are kept cold in the refrigerator until you are ready to assemble.
  • Texture Balance: If you can't find traditional red bean paste, sweetened boiled red kidney beans or even soft-mashed black chickpeas tossed in jaggery can work in a pinch for a unique twist.
  • Alternative Base: If shaved ice isn't available, you can pulse ice cubes in a high-powered blender or food processor until you get a fine snow-like consistency.
