Cauliflower Steak with Tahini Drizzle

Cauliflower Steak with Tahini Drizzle

Caramelised, tender-crisp thick-cut cauliflower steaks are roasted to perfection and finished with a rich, zesty tahini-lemon drizzle and a scattering of toasted seeds. This elegant, plant-based main course delivers bold, nutty flavours while providing exceptional cardiovascular benefits.

Ingredients

For the Cauliflower Steaks:

  • Main Vegetable: 1 large head of cauliflower (stem intact, cut vertically into 3/4-inch-thick steaks)
  • Healthy Fat: 3 tablespoons extra-virgin olive oil
  • Seasoning: 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon ground cumin, and sea salt and freshly cracked black pepper to taste

For the Tahini Drizzle & Garnish:

  • Tahini Base: 1/4 cup pure sesame tahini
  • Acidity & Brightness: 2 tablespoons fresh lemon juice
  • Flavour & Liquid: 1 to 2 tablespoons warm water (to thin) and 1 small clove garlic (minced or grated)
  • Topping: 1 tablespoon toasted sesame seeds, hemp hearts, or chopped fresh parsley

Instructions & Method

  1. Preheat and Prep:
    • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Cut the Steaks:
    • Carefully slice the head of cauliflower right through the core into thick 3/4-inch slabs. (Reserve any loose florets for roasting alongside).
  3. Season and Oil:
    • Arrange the cauliflower steaks on the prepared baking sheet. Generously brush both sides with extra-virgin olive oil, then season evenly with smoked paprika, garlic powder, cumin, sea salt, and black pepper.
  4. Roast to Perfection:
    • Roast in the oven for 20 to 25 minutes, carefully flipping halfway through, until the cauliflower is tender-fork-pier-cable and the edges are deeply golden and caramelised.
  5. Make the Tahini Drizzle:
    • While the cauliflower roasts, whisk together the tahini, fresh lemon juice, grated garlic, and a pinch of salt in a small bowl. Gradually whisk in warm water one tablespoon at a time until a smooth, pourable drizzle consistency forms.
  6. Plate and Serve:
    • Transfer the warm cauliflower steaks to a serving platter, drizzle generously with the zesty tahini sauce, and garnish with toasted sesame seeds and fresh parsley.

Tips for Success & Heart-Healthy Benefits

Elevating simple vegetables with nutrient-dense sauces is a wonderful way to support your heart health:

  • Incorporate Sesame Healthy Fats: Tahini is made from ground sesame seeds, which are rich in healthy monounsaturated and polyunsaturated fats that help manage cholesterol levels and protect heart function.
  • Harness Cruciferous Antioxidants: Cauliflower belongs to the cruciferous vegetable family, loaded with sulfur-containing compounds and antioxidants that reduce systemic inflammation and support healthy blood vessels.
  • Leverage Plant-Based Minerals: Sesame seeds and tahini provide essential minerals like magnesium and calcium, which play vital roles in maintaining healthy blood pressure and regulating heart muscle contractions.
  • Control Sodium Naturally: Utilising garlic, smoked paprika, and lemon juice provides an explosion of savoury flavour without relying on added sodium, keeping your cardiovascular system unstrained.
