It delivers a deeply satisfying, nutrient-dense meal that warms the soul while actively supporting cardiovascular wellness.

Ingredients

For the Filling:

  • Legume & Mushrooms: 1 cup dried brown or green lentils (rinsed) and 1 lb cremini or button mushrooms (sliced)
  • Aromatics & Veggies: 1 medium yellow onion (diced), 2 carrots (diced), 2 stalks celery (diced), and 3 cloves garlic (minced)
  • Broth & Tomato: 3 cups low-sodium vegetable broth and 2 tablespoons tomato paste
  • Herbs & Seasoning: 1 tablespoon fresh thyme leaves, 1 teaspoon rosemary, 1 tablespoon low-sodium tamari or soy sauce, and black pepper to taste
  • Healthy Fat: 2 tablespoons extra-virgin olive oil

For the Mashed Topping:

  • Potatoes & Veggies: 2 medium sweet potatoes (peeled and cubed) and 1 medium head of cauliflower (cut into florets)
  • Creaminess: 1/4 cup unsweetened plant-based milk (or low-fat milk) and 1 tablespoon extra-virgin olive oil
  • Seasoning: A pinch of sea salt and ground nutmeg

Instructions & Method

  1. Cook the Lentils:
    • In a medium saucepan, combine the rinsed lentils with 3 cups of water or low-sodium vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 20 to 25 minutes until tender. Drain any excess liquid and set aside.
  2. Prepare the Mash:
    • Place the cubed sweet potatoes and cauliflower florets in a large pot of water, bring to a boil, and cook for 15 minutes until fork-tender. Drain thoroughly, return to the pot, and mash with plant-based milk, olive oil, sea salt, and a pinch of nutmeg until smooth and fluffy.
  3. Sauté the Aromatics:
    • In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the onion, carrots, and celery, cooking for 6 to 8 minutes until softened. Stir in the minced garlic, thyme, and rosemary until fragrant.
  4. Build the Mushroom & Lentil Filling:
    • Add the sliced mushrooms to the skillet and cook until they release their moisture and brown slightly. Stir in the tomato paste and tamari, then pour in the low-sodium vegetable broth and cooked lentils. Simmer for 10 minutes until the gravy thickens richly.
  5. Assemble the Pie:
    • Preheat your oven to 375°F (190°C). Transfer the lentil and mushroom filling into a baking dish, spreading it out into an even layer. Spoon the sweet potato and cauliflower mash evenly over the top, smoothing it out with a spatula and creating light ridges with a fork for browning.
  6. Bake and Serve:
    • Bake for 25 to 30 minutes until the edges are bubbly and the peaks of the potato mash are lightly golden. Let cool for 10 minutes before serving.

Tips for Success & Heart-Healthy Benefits

Enjoying comforting, plant-forward comfort food is a fantastic way to protect and nourish your cardiovascular system:

  • Harness Plant Protein and Soluble Fibre: Lentils are an exceptional source of plant-based protein and soluble fibre, which helps bind to cholesterol in the digestive tract and supports healthy LDL cholesterol levels.
  • Leverage Potassium and Beta-Carotene: Sweet potatoes provide generous amounts of potassium (which helps regulate blood pressure) and beta-carotene, a powerful antioxidant that protects blood vessel walls.
  • Embrace Heart-Healthy Fats: Using extra-virgin olive oil instead of butter or heavy cream introduces beneficial monounsaturated fats and polyphenols while keeping saturated fat low.
  • Control Sodium for Blood Pressure: Utilising low-sodium vegetable broth and savoury whole foods like mushrooms, tamari, and herbs delivers robust umami flavour without relying on high amounts of sodium that can strain arterial health.
