Fusion Recipe: Duck Confit Spring Rolls
Duck Confit Spring Rolls are a luxurious fusion that bridges classic French charcuterie with Asian street food craft. Tender, rich, slow-cooked shredded duck confit is tossed with crisp julienned vegetables and fragrant five-spice, then encased in a thin, golden spring roll wrapper. Deep-fried until shatteringly crispy, every bite opens into a melt-in-your-mouth centre of savoury, savoury-sweet duck richness, perfectly balanced by a bright, tangy plum or hoisin dipping sauce.
Ingredients
For the Spring Roll Filling:
- Duck Confit Legs: 2 legs (store-bought or homemade), shredded, skin discarded or finely chopped
- Spring Roll Wrappers: 12–15 large sheets (thawed if frozen)
- Shredded Cabbage/Napa Cabbage: 1 cup
- Carrot: 1 medium, julienned into thin matchsticks
- Green Onions (Scallions): 3 stalks, finely sliced
- Chinese Five-Spice Powder: ½ teaspoon
- Soy Sauce: 1 tablespoon
- Hoisin Sauce: 1 tablespoon
- Fresh Ginger: 1 teaspoon, finely grated
- Sesame Oil: 1 teaspoon
For Assembly & Frying:
- Egg Wash / Sealant: 1 egg whisked with 1 tablespoon water
- Frying Oil: Vegetable, peanut, or canola oil for deep frying
For the Dipping Sauce:
- Plum Sauce or Hoisin Sauce: 3 tablespoons
- Rice Vinegar: 1 teaspoon
- Sriracha or Chilli Oil: ½ teaspoon (optional, for a kick)
Instructions & Method
1. Shred the Duck & Sauté the Filling:
- Warm the duck confit legs slightly in a pan to melt off excess fat. Shred the tender duck meat using two forks.
- In a skillet over medium heat, add 1 tablespoon of reserved duck fat. Add the grated ginger, julienned carrots, shredded cabbage, and scallions. Sauté for 2 minutes until just softened but still crisp.
- Stir in the shredded duck meat, five-spice powder, soy sauce, hoisin sauce, and sesame oil. Toss everything for 1–2 minutes until well combined.
- Remove from heat and let the filling cool completely before wrapping.
2. Assemble the Spring Rolls:
- Lay one spring roll wrapper on a clean surface in a diamond position (one corner pointing toward you).
- Spoon about 2 to 3 tablespoons of the duck filling onto the bottom third of the wrapper.
- Fold the bottom corner tightly over the filling, then roll firmly halfway up.
- Fold the left and right corners inward to create a neat envelope shape.
- Brush the top corner lightly with the egg wash, then finish rolling upward to seal tightly. Repeat with remaining filling and wrappers.
3. Fry to Golden Perfection:
- Heat 2 inches of oil in a deep skillet or heavy pot to 175°C (350°F).
- Carefully lower 3–4 spring rolls into the hot oil at a time (do not overcrowd).
- Fry for 3–5 minutes, turning occasionally, until uniformly golden brown and crisp.
- Transfer with a slotted spoon to a wire rack or paper towel-lined plate to drain.
4. Serve:
Whisk together the plum sauce, rice vinegar, and chilli oil in a small bowl. Slice the spring rolls diagonally and serve hot alongside the dipping sauce.
Tips for Best Results
- Cool the Filling Completely: Never wrap hot or warm filling into spring roll wrappers; the steam will make the delicate wrappers soggy and cause them to tear or burst during frying.
- Tight Rolling is Key: Roll the wrappers firmly around the filling to eliminate air pockets, ensuring a uniform crunch and preventing excess oil from seeping inside.
- Utilise Leftover Duck Fat: Save any extra rendered duck fat from the confit legs to fry vegetables or roast potatoes later—it adds incredible depth of flavour!
