Eat Well Recipe: Dark Chocolate (90%) and Reishi Mushroom Truffles

These Dark Chocolate (90%) and Reishi Mushroom Truffles are a luxurious, functional confection meticulously crafted to promote cardiovascular wellness. Using 90% dark chocolate ensures a high concentration of flavanols, potent antioxidants scientifically proven to increase nitric oxide production, lower blood pressure, and improve arterial elasticity. Reishi mushroom powder, a revered adaptogen, works in tandem to lower systemic inflammation, reduce LDL cholesterol, and assist the body in managing stress, which significantly decreases strain on the cardiovascular system. Free from refined sugars and dairy, these truffles leverage pure plant compounds to prevent oxidative damage within blood vessels, improve overall circulation, and offer a powerful, delicious defence mechanism that actively helps minimise the long-term risk of a heart attack.

Ingredients

  • 90% Dark chocolate: 8 ounces (225g), finely chopped
  • Full-fat coconut milk (canned): 1/2 cup (warmed to create the ganache)
  • Reishi mushroom powder: 1.5 teaspoons (ensure it is a high-quality, dual-extract powder)
  • Pure vanilla extract: 1/2 teaspoon
  • Pinch of sea salt: To balance flavours and enhance the chocolate profile
  • Pure maple syrup or raw honey: 1 tablespoon (optional, to temper the natural bitterness)
  • Unsweetened cocoa powder: 1/4 cup (for rolling and coating)

Instructions and Method

1.Heat the coconut milk:3 min.

Pour the full-fat coconut milk into a small saucepan and heat over medium-low heat until it just begins to simmer around the edges. Do not let it come to a rolling boil.

2.Melt the chocolate ganache:5 min.

Place the finely chopped 90% dark chocolate in a heatproof glass bowl. Pour the hot coconut milk directly over the chocolate, add the maple syrup, and let it sit undisturbed for 2 to 3 minutes to allow the chocolate to melt from the residual heat.

3.Incorporate the adaptogens:2 min.

Add the reishi mushroom powder, vanilla extract, and a small pinch of sea salt to the bowl. Whisk gently starting from the centre and working outward until the mixture transforms into a smooth, glossy, and completely uniform ganache.

4.Chill the mixture:2 hours.

Cover the bowl and place it in the refrigerator for at least 2 hours, or until the ganache has completely firmed up and is pliable enough to handle.

5.Roll and coat:5 min.

Line a baking sheet with parchment paper. Use a small spoon or melon baller to scoop out tablespoon-sized portions of the chilled ganache. Roll them quickly between your palms to form smooth balls, roll each ball immediately through a shallow dish filled with the unsweetened cocoa powder to coat, and store them in the fridge.

Tips for Success

  • Handle with Cool Hands: Because 90% dark chocolate combined with coconut milk melts quickly from body heat, rinse your hands in cold water and dry them thoroughly before rolling the truffles to keep the ganache firm.
  • Never Burn the Chocolate: Avoid boiling the coconut milk or using direct high heat on the chocolate. Excessive heat breaks down the fragile cocoa solids and damages the heart-healthy flavanols, causing the ganache to separate into an oily texture.
  • Incorporate Healthy Dustings: While unsweetened cocoa powder is the classic coating, you can boost the cardiovascular benefits further by rolling half of the truffles in finely crushed raw walnuts or hemp seeds, adding extra omega-3 fatty acids to every bite.
