Instead of the traditional hard caramel top, this version features a delicate, toasted coconut meringue that provides a crisp, ethereal texture. Ingredients


For the Sponge Layers

  • 6 Large eggs (separated)
  • 150g Granulated sugar
  • 150g All-purpose flour
  • 50g Melted unsalted butter
  • 1 tsp Vanilla extract

For the Coconut-Chocolate Filling

  • 200g High-quality dark chocolate (70% cocoa), melted
  • 250g Unsalted butter, softened
  • 150g Powdered sugar
  • 100g Cream of coconut (thick, unsweetened)
  • 1 tsp Coconut extract

1. Baking the Sponge Layers

  1. Preheat oven to 180°C. Prepare seven 8-inch round parchment-lined cake pans.
  2. Whisk egg yolks with half the sugar until pale. In a separate bowl, whip egg whites to soft peaks, gradually adding remaining sugar until stiff.
  3. Fold the whites into the yolk mixture, then gently fold in sifted flour and melted butter.
  4. Divide batter evenly among the seven pans and bake for 8–10 minutes until golden. Let cool.

2. Preparing the Filling and Meringue

  1. Filling: Cream butter and powdered sugar until light. Beat in the melted chocolate, cream of coconut, and extract until smooth and fluffy.
  2. Meringue: Whip egg whites to soft peaks, gradually adding sugar until stiff and glossy. Fold in the ground coconut. Spread onto a baking sheet in an 8-inch circle and bake at 120°C for 45 minutes until crisp.

3. Assembly

  1. Stack the seven sponge layers, spreading coconut-chocolate filling between each.
  2. Cover the sides and top with the remaining filling.
  3. Place the baked coconut meringue disc on top just before serving.
