Fusion Recipe: Dobos Torte Coconut Meringue
Dobos Torte Coconut Meringue is a stunning reinvention of the iconic Hungarian classic, blending Central European precision with the vibrant, tropical spirit of Macanese influence. Instead of the traditional hard caramel top, this version features a delicate, toasted coconut meringue that provides a crisp, ethereal texture. The signature seven-layer sponge remains, but it is now sandwiched with a luscious coconut-chocolate buttercream, offering a velvety contrast to the airy meringue crown. This fusion dish masterfully balances the richness of chocolate with the subtle, nutty sweetness of coconut, creating a sophisticated dessert that feels both nostalgic and refreshingly new. It is an elegant, multi-layered masterpiece that brings a unique island-inspired twist to a timeless celebration cake.
Ingredients
For the Sponge Layers
- 6 Large eggs (separated)
- 150g Granulated sugar
- 150g All-purpose flour
- 50g Melted unsalted butter
- 1 tsp Vanilla extract
For the Coconut-Chocolate Filling
- 200g High-quality dark chocolate (70% cocoa), melted
- 250g Unsalted butter, softened
- 150g Powdered sugar
- 100g Cream of coconut (thick, unsweetened)
- 1 tsp Coconut extract
For the Coconut Meringue Topping
- 3 Egg whites
- 150g Superfine sugar
- 50g Desiccated coconut, finely ground
Instructions
1. Baking the Sponge Layers
- Preheat oven to 180°C. Prepare seven 8-inch round parchment-lined cake pans.
- Whisk egg yolks with half the sugar until pale. In a separate bowl, whip egg whites to soft peaks, gradually adding remaining sugar until stiff.
- Fold the whites into the yolk mixture, then gently fold in sifted flour and melted butter.
- Divide batter evenly among the seven pans and bake for 8–10 minutes until golden. Let cool.
2. Preparing the Filling and Meringue
- Filling: Cream butter and powdered sugar until light. Beat in the melted chocolate, cream of coconut, and extract until smooth and fluffy.
- Meringue: Whip egg whites to soft peaks, gradually adding sugar until stiff and glossy. Fold in the ground coconut. Spread onto a baking sheet in an 8-inch circle and bake at 120°C for 45 minutes until crisp.
3. Assembly
- Stack the seven sponge layers, spreading coconut-chocolate filling between each.
- Cover the sides and top with the remaining filling.
- Place the baked coconut meringue disc on top just before serving.
Pro-Tips for Success
- Layer Thinness: Keep the sponge layers thin; the elegance of a Dobos Torte comes from the high ratio of filling to cake.
- Meringue Timing: Only add the coconut meringue topping right before serving. If placed on the cake too early, the moisture from the filling will cause the meringue to lose its delicate crunch.
- Even Spreading: Use an offset spatula to ensure the coconut-chocolate filling is perfectly level between each layer for a professional, uniform look.
