This dish reimagines the Manti—traditionally a savoury central Asian staple—as a sophisticated sweet, featuring paper-thin dough parcels filled with a molten, intense dark chocolate ganache. Ingredients
For the Sweet Manti Dough
- 200g All-purpose flour
- 1 Large egg
- 60ml Warm water
- Pinch of salt
For the Chocolate Ganache Filling
- 150g Dark chocolate (70% cocoa), finely chopped
- 100ml Heavy cream
- 1 tbsp Unsalted butter
For the Dobos Caramel Base
- 150g Granulated sugar
- 2 tbsp Water
- 1 tsp Lemon juice
Instructions
1. Preparing the Ganache
- Heat heavy cream until simmering, then pour over the chopped chocolate.
- Stir until smooth, add butter, and chill in the refrigerator until firm enough to pipe or scoop into small portions.
2. Shaping the Manti
- Combine flour, egg, water, and salt to form a stiff dough. Knead for 10 minutes until smooth; let rest for 30 minutes.
- Roll the dough out to an ultra-thin sheet. Cut into 5cm squares.
- Place a small dollop of chilled ganache in the centre of each square. Fold corners together and pinch tightly to seal into a dumpling shape.
- Steam in a bamboo steamer for 6–8 minutes.
3. The Caramel Base and Assembly
- In a heavy-bottomed pan, heat sugar, water, and lemon juice until it turns a deep amber caramel.
- Quickly pour the caramel onto a silicone mat, spreading it into a very thin layer. Allow to harden, then break into small shards or a single large base plate.
- Place the warm Manti over the caramel shards immediately before serving.
