An exquisite meeting of North African heritage and European celebration, this recipe reinterprets Morocco’s iconic Kaab el Ghazal—delicate, crescent-shaped pastries filled with fragrant almond paste, orange blossom water, and cinnamon. Traditionally brushed with simple syrup, these golden horns are instead kissed with an aromatic reduction of Spanish Cava and organic honey. The effervescent wine reduction cuts through the rich marzipan filling with a subtle, crisp acidity and sophisticated floral notes, transforming a classic royal confection into an unforgettable modern luxury dessert.

Ingredients

Pastry & Almond Filling

  • 300g All-purpose flour
  • 50g Unsalted butter, melted
  • 2 tbsp Orange blossom water
  • 300g Blanched almonds
  • 150g Granulated sugar
  • 1 tsp Ground cinnamon
  • 1/2 tsp Mastic gum powder (optional)

Cava Glaze & Finish

  • 250ml Spanish Cava (dry sparkling wine)
  • 3 tbsp Raw honey
  • 1 tsp Fresh lemon zest
  • 1 tbsp Orange blossom water
  • Edible Silver leaf or crushed pistachios for garnish

Instructions & Method

1. Prepare the Almond Filling: Blanch and finely grind the almonds with granulated sugar until a fine meal forms. Knead in the cinnamon, mastic gum, melted butter, and orange blossom water until the almond paste is pliable and holds its shape. Roll into small, finger-length cylinders.

2. Make the Pastry Dough: In a bowl, combine the flour, melted butter, orange blossom water, and a splash of warm water. Knead for 10 minutes until smooth and elastic. Wrap in plastic and rest for 30 minutes.

3. Shape the Gazelle Horns: Roll the dough out paper-thin on a lightly greased surface. Place an almond cylinder near the edge, fold the dough over it, and press down to seal the edges closely around the filling. Cut out the characteristic crescent shape using a pastry wheel.

4. Pierce and Bake: Arrange the crescents on a parchment-lined baking sheet. Prick each cookie gently with a fine needle at the base to prevent cracking during baking. Bake at 160°C (320°F) for 18–20 minutes until pale golden; they should not brown heavily.

5. Brew the Cava Glaze: In a small saucepan, combine the dry Cava, raw honey, and lemon zest. Simmer over medium heat for 12–15 minutes until reduced to a syrupy, glossy glaze. Stir in the final splash of orange blossom water off the heat.

6. Glaze and Garnish: While the cookies are still warm, lightly brush them with the shimmering Cava reduction. Garnish with a subtle touch of edible silver leaf or a dusting of crushed pistachios before serving.

  • Dough Thickness: Rolling the pastry paper-thin is crucial; the focus should entirely be on the tender almond marzipan core inside.
  • Needle Pricking: Do not skip pricking the dough bubbles; trapped steam will rupture the delicate crescent shape in the oven.
  • Cava Selection: Use a crisp, dry Brut Cava to ensure the reduction balances the natural sweetness of the almond paste perfectly.
