Ingredients
For the Wellington
- 800g Wagyu beef fillet, trimmed
- 500g Mixed mushrooms (cremini, shiitake, or porcini), finely minced
- 2 cloves Garlic, minced
- 1 tsp Chinese five-spice powder
- 100g Prosciutto di Parma (thinly sliced)
- 1 sheet All-butter puff pastry (thawed)
- 2 Egg yolks (for egg wash)
- Sea salt and black pepper
For the Star Anise Reduction
- 200ml Beef stock (high quality)
- 100ml Red wine
- 2 Whole star anise
- 1 tbsp Cold butter (to finish)
Instructions
1. Preparing the Beef and Duxelles
- Season the beef generously with salt and pepper. Sear in a screaming-hot pan until browned on all sides. Remove and brush with mustard while warm.
- In the same pan, sauté the mushrooms and garlic until all moisture has evaporated. Stir in the five-spice powder. Cook until it forms a dry, paste-like consistency. Cool completely.
2. Assembly
- Lay out plastic wrap; layer the prosciutto slices in an overlapping rectangle. Spread the mushroom duxelles evenly over the prosciutto.
- Place the beef in the centre. Use the plastic wrap to roll the prosciutto and duxelles tightly around the beef. Chill in the fridge for 30 minutes.
- Roll out the puff pastry. Remove plastic from the beef, place the log on the pastry, and seal tightly. Brush with egg wash.
3. Baking and Sauce
- Preheat oven to 200°C. Bake for 25–35 minutes for medium-rare (internal temp of 50°C). Rest for at least 15 minutes before slicing.
- For the reduction, simmer stock, wine, and star anise until reduced by half. Whisk in the cold butter just before serving to emulsify.
