For the Yam Dough
- 1 lb (approx. 450g) taro or purple yam, peeled and cut into chunks
- 2 tbsp Mangalica pork lard (melted, plus extra for frying)
- 1/4 cup tapioca starch or potato starch
- 1/2 tsp salt
- 1/4 tsp white pepper
For the Spiced Pork Filling
- 1/2 cup ground Mangalica pork (or high-quality fatty minced pork)
- 1 shallot, finely minced
- 1 clove garlic, minced
- 1 tsp soy sauce
- 1/2 tsp Chinese five-spice powder
- 1 tsp sesame oil
- Pinch of salt and sugar
For the Spicy Pepper Dipping Sauce
- 3 fresh red chilli peppers, sliced
- 2 cloves garlic, crushed
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tsp sugar

1. Steam and Mash the Yam
- Steam: Place the taro or yam chunks in a steamer basket and steam over boiling water for 15 to 20 minutes until completely tender and easily pierced with a fork.
- Mash: Transfer the hot yam to a mixing bowl and mash thoroughly until smooth. Mix in the melted Mangalica pork lard, tapioca starch, salt, and white pepper until it forms a pliable, dough-like consistency. Set aside to cool slightly.
2. Prepare the Pork Filling
- Cook: Heat a small skillet over medium heat. Sauté the minced shallot and garlic until fragrant, then add the ground Mangalica pork.
- Season: Stir in the soy sauce, five-spice powder, sesame oil, salt, and sugar. Cook until the pork is fully browned and any excess moisture has evaporated. Remove from heat and let cool.
3. Shape the Fofinhos
- Portion: Divide the yam dough into equal golf ball-sized portions.
- Stuff: Flatten a piece of dough in the palm of your hand, place a teaspoon of the spiced pork filling in the centre, and carefully wrap the yam dough around the filling, sealing the edges completely into an oval or round croquette shape. Repeat for all pieces.
4. Fry to Crispy Perfection
- Heat fat: In a deep skillet or wok, heat a generous amount of Mangalica pork lard (or neutral oil mixed with a spoonful of lard for flavour) to 350°F (175°C).
- Fry: Gently drop the stuffed fofinhos into the hot fat in small batches. Fry for 4 to 6 minutes, turning occasionally, until the exterior is deeply golden brown and wonderfully crisp. Remove with a slotted spoon and drain on paper towels.
5. Make the Dipping Sauce & Serve
- Blend sauce: In a small bowl, combine the sliced chilli peppers, crushed garlic, rice vinegar, soy sauce, and sugar. Stir until the sugar dissolves.
- Serve: Serve the hot, crispy fofinhos immediately with the spicy dipping sauce on the side.
