Fusion Recipe: Taro Tapioca Pudding with Spiced Cherries

Taro Tapioca Pudding with Spiced Cherries is a sophisticated, globally-inspired twist on a nostalgic American comfort classic. By incorporating vibrant, earthy taro root into a silky tapioca base, the pudding achieves a beautiful lavender hue and a subtle, nutty sweetness that feels both comforting and exotic. This creamy foundation is elevated by a vibrant compote of Christmas cherries, slow-simmered with the warming notes of cinnamon and spicy fresh ginger. Served warm, the contrast between the velvety pudding and the bright, spiced fruit creates a harmonious balance of flavours and textures. It is the perfect winter dessert—elegant enough for a holiday table, yet cozy enough for a quiet evening at home, blending the best of traditional pudding with the aromatic warmth of seasonal holiday spices.

Ingredients

For the Taro Tapioca Pudding:

  • Tapioca: ½ cup small pearl tapioca (soaked in water for 30 minutes, then drained)
  • Taro: 1 cup fresh taro root, peeled, cubed, and steamed until very soft
  • Milk: 1 can (13.5 oz) full-fat coconut milk
  • Liquid: 1 ½ cups whole milk (or almond milk for a nuttier flavour)
  • Sweetener: cup granulated sugar or palm sugar
  • Flavour: 1 teaspoon vanilla extract
  • Salt: A pinch of sea salt

For the Spiced Cherries:

  • Cherries: 2 cups fresh or frozen pitted cherries
  • Sugar: 2 tablespoons brown sugar
  • Spices: 1 cinnamon stick, 1 teaspoon freshly grated ginger
  • Liquid: 1 tablespoon water or orange juice

Instructions & Method

  1. Prep the Taro: Mash or blend the steamed taro root with the coconut milk until completely smooth and creamy.
  2. Cook the Pudding: In a medium saucepan, combine the soaked tapioca, the taro-coconut mixture, whole milk, sugar, and salt. Bring to a gentle simmer over medium-low heat, stirring constantly to prevent sticking.
  3. Simmer: Continue to cook for 15–20 minutes, or until the tapioca pearls are translucent and the pudding has thickened to your desired consistency. Stir in the vanilla extract at the very end.
  4. Make the Spiced Cherries: While the pudding simmers, combine the cherries, brown sugar, cinnamon stick, grated ginger, and water/juice in a small saucepan. Simmer over low heat for 8–10 minutes until the cherries are softened and a syrup has formed.
  5. Assemble: Spoon the warm pudding into bowls. Top with a generous scoop of the warm cherry compote and serve immediately.

Pro Tips

  • Taro Texture: For a more rustic feel, mash the taro with a fork rather than a blender to keep small, delightful bites of root throughout the pudding.
  • Soaking is Key: Do not skip soaking your tapioca pearls; it ensures they cook evenly and prevents the centres from remaining hard or "chalky."
  • Make it Vegan: This recipe is naturally dairy-free if you use coconut milk and almond/oat milk. If you prefer a richer flavour, add a splash of full-fat coconut cream right before serving.
  • Storage: If the pudding thickens too much while sitting, stir in a splash of warm milk or coconut milk to bring back that signature creamy texture.
