Chicken with Saffron & Olives Fideuà is a magnificent Mediterranean hybrid that replaces the traditional rice of a paella with short, toasted pasta noodles (fideos). Originating from the coastal kitchens of Catalonia, a classic fideuà embraces the deep umami of seafood or meat stocks enriched with aromatic sofrito and golden saffron. This unique variation incorporates succulent whole chicken pieces alongside buttery, briny green Moroccan olives, creating a stunning cross-cultural harmony. As the pasta toasts in the pan before simmering, it absorbs the rich saffron broth and develops a deeply savoury flavour with a signature crispy bottom crust known as the socarrat.



Recipe: Chicken with Saffron & Olives Fideuà

Ingredients

  • The Protein: 1.5 lbs (approx. 700g) bone-in, skin-on chicken thighs or drumsticks
  • The Pasta: 8 oz (225g) fideos (short, thin fideuà noodles or broken vermicelli pasta)
  • Aromatics & Vegetables: 1 large yellow onion (finely diced), 3 cloves garlic (minced), 1 ripe tomato (grated or finely chopped)
  • Flavour & Colour: A generous pinch of high-quality saffron threads, 1 tsp sweet Spanish paprika (pimentón dulce)
  • Olives & Broth: ½ cup green Moroccan olives (pitted and roughly chopped), 3 cups warm chicken stock
  • Oil & Seasoning: 3 tbsp extra virgin olive oil, salt and freshly ground black pepper to taste, fresh lemon wedges and chopped parsley for garnish


Instructions & Method


Part 1: Browning the Chicken & Aromatics

  1. Brown the Chicken: Heat the olive oil in a traditional paella pan or a wide, shallow skillet over medium-high heat. Season the chicken pieces with salt and pepper, then place them skin-side down in the pan. Sear for 6–8 minutes per side until golden brown and crispy. Remove chicken and set aside.
  2. Build the Sofrito: In the remaining pan juices, reduce the heat to medium. Add the diced onion and sauté for 5 minutes until soft and translucent. Add the minced garlic and Spanish paprika, stirring constantly for 30 seconds until fragrant.
  3. Add Tomato: Stir in the grated tomato and cook down for another 3–4 minutes until the moisture evaporates and the mixture forms a thick, rich paste.

Part 2: Toasting the Pasta & Simmering

  1. Toast the Fideos: Add the dry fideuà noodles directly into the pan with the sofrito. Toss the noodles continuously for 2–3 minutes until they turn a light, golden-brown colour and absorb the aromatic oils.
  2. Infuse the Broth: In a separate small bowl, steep the saffron threads in ½ cup of your warm chicken stock for a few minutes. Pour the saffron-infused stock and the remaining 2.5 cups of chicken stock into the pan. Bring everything to a gentle boil.
  3. Arrange & Add Olives: Nestle the browned chicken pieces back into the pan among the noodles, distributing them evenly. Scatter the chopped green Moroccan olives across the surface. Season the liquid lightly with salt.

Part 3: Finishing the Fideuà

  1. Simmer: Reduce the heat to medium-low and let it simmer uncovered for about 10–12 minutes without stirring, allowing the noodles to cook and absorb the liquid.
  2. Form the Socarrat (Optional): In the final minute of cooking, turn the heat up slightly until you hear a gentle sizzling sound from the bottom of the pan, creating a delicious, toasted crust (socarrat).
  3. Rest: Remove from heat, cover the pan loosely with a clean kitchen towel or foil, and let it rest for 5 minutes before serving.


Serving & Tips

  • How to Serve: Garnish the pan with fresh chopped parsley and arrange lemon wedges around the edges. Serve straight from the skillet family-style, squeezing fresh lemon juice over the top just before eating.
  • Tip for the Pasta: If you cannot find traditional curved fideos, regular thin spaghetti or vermicelli broken into 1-inch lengths works wonderfully as a substitute.
  • Tip for the Olives: Rinsing the green Moroccan olives lightly before chopping helps balance their saltiness so they complement, rather than overwhelm, the delicate floral notes of the saffron.
