Fusion Recipe: Chorizo & Fig Briouats
Chorizo & Fig Briouats offer a dazzling Mediterranean fusion, marrying the crispy, golden geometry of Moroccan pastry with the bold, smoky flavours of Spain. Traditionally, briouats are sweet or savoury triangular parcels wrapped in paper-thin warqa or phyllo dough, then fried or baked to a shattering crisp. By stuffing these flaky parcels with a dynamic filling of spicy, paprika-rich cured Spanish chorizo and luscious, sweet fig jam, this recipe creates an irresistible flavour profile. The fiery, savoury kick of the sausage cuts right through the rich, honeyed sweetness of the figs, delivering an explosion of contrasting textures and tastes in every single bite.
Recipe: Chorizo & Fig Briouats
Prep time: 25 mins | Cook time: 15 mins | Yield: About 16 briouats
Ingredients
- The Wrapper: 1 package (approx. 10–12 sheets) of phyllo dough (thawed) or square warqa pastry sheets
- The Meat: 8 oz (225g) authentic Spanish cured chorizo sausage, finely diced
- The Sweetness: ⅓ cup high-quality fig jam (or thick fig spread)
- Aromatics & Cheese: ½ cup crumbled goat cheese or feta (to add creaminess and balance the spice), 2 tbsp finely chopped fresh cilantro or flat-leaf parsley
- Binding & Crisping: ½ cup (1 stick) unsalted butter, melted (or clarified butter/ghee)
Instructions & Method
Part 1: Making the Filling
- Crisp the Chorizo: Place the finely diced chorizo in a skillet over medium heat. Sauté for 5–7 minutes until the meat releases its vibrant red oils and turns slightly crispy at the edges.
- Drain & Combine: Remove the pan from the heat and use a slotted spoon to transfer the chorizo to a mixing bowl, leaving most of the excess oil behind.
- Mix: While the chorizo is still warm, stir in the fig jam, crumbled goat cheese, and fresh cilantro. Mix thoroughly until a cohesive, thick, and sticky filling forms. The residual heat will slightly melt the cheese, binding the sweet figs and spicy meat together.
Part 2: Folding the Briouats (Triangle Technique)
- Prep the Phyllo: Lay your phyllo sheets flat and cover them with a slightly damp kitchen towel to prevent them from drying out. Cut the sheets lengthwise into long strips, roughly 3 inches wide.
- Brush with Butter: Take one strip of phyllo and brush it lightly with melted butter. Fold another strip on top (or double-layer depending on thickness) for structural integrity.
- Place Filling: Spoon about 1 tablespoon of the chorizo and fig mixture into the bottom corner of the strip.
- Fold into Triangles: Fold the bottom corner of the dough up over the filling to form a triangle. Continue folding the triangle over itself in a zig-zag or flag-folding motion until you reach the end of the strip. Tuck or seal the final edge with a little melted butter. Repeat with the remaining mixture.
Part 3: Cooking & Baking
- Preheat: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper (alternatively, you can shallow-fry them in neutral oil over medium heat until golden).
- Butter and Bake: Arrange the folded briouats seam-side down on the baking sheet. Generously brush the tops and sides with the remaining melted butter to ensure maximum crispiness.
- Bake: Bake for 12–15 minutes until the pastry is deep golden-brown, shattering crisp, and bubbling slightly at the edges. Let cool for 5 minutes before serving.
Serving & Tips
- How to Serve: Serve these warm as an impressive appetiser, party finger food, or tapas-style snack, perhaps accompanied by an extra small bowl of fig jam for dipping.
- Tip for Wrapping: Work quickly with phyllo dough so it doesn't dry out and crack; keep unused sheets under a damp towel while you fold.
- Make-Ahead Tip: You can assemble the raw briouats and freeze them on a tray before transferring them to a bag. Bake straight from the freezer, just add an extra 3–4 minutes to the cooking time!
