Curried Seafood Crêpes Suzette is a bold and sophisticated culinary bridge that transforms the iconic French dessert classic into a savoury, aromatic masterpiece. Inspired by Vietnamese yellow curry flavours (Cà Ri Tôm), delicate crêpes are stuffed with a rich filling of tender seafood simmered in spiced coconut milk and curry powder. Finished with a dramatic, savoury flambé table-side, this dish offers a stunning interplay of buttery, caramelised edges, tender oceanic flavours, and warming spice.

For the Savoury Crêpes

  • 1 cup all-purpose flour
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 cup milk
  • 2 large eggs
  • 2 tbsp melted butter (plus extra for panning)
  • 1 tsp finely chopped fresh chives or cilantro (for flecks of colour in the batter)


For the Seafood Curry Filling

  • 2 tbsp neutral cooking oil or butter
  • 2 shallots, finely minced
  • 2 cloves garlic, minced
  • 1 tbsp mild curry powder (or yellow Vietnamese curry powder)
  • 1/2 tsp ground lemongrass or 1 fresh stalk bruised
  • 1 cup full-fat coconut milk
  • 1/2 cup fish stock or seafood broth
  • 1 tsp fish sauce (to taste)
  • 8 oz medium shrimp, peeled and chopped into bite-sized pieces
  • 8 oz sea scallops or firm white fish chunks (like cod or snapper)
  • 1 tsp cornstarch mixed with 1 tbsp water (optional, if extra thickening is needed)


For the Flambé Butter Sauce

  • 3 tbsp unsalted butter
  • 1 tbsp curry powder
  • 2 tbsp fresh lime juice (or orange juice for a nod to the original Suzette twist)
  • 1/4 cup rum, brandy, or cognac (for the flambé)
  • Fresh cilantro or Thai basil leaves, for garnish


📝 Instructions & Method


1. Make the Crêpe Batter

  • Blend wet and dry: In a large bowl, whisk together the flour, sugar, and salt. In a separate jug, whisk the milk, eggs, and melted butter. Gradually pour the wet ingredients into the dry, whisking continuously until smooth and lump-free.
  • Rest: Stir in the chopped herbs and let the batter rest for 20 minutes so the flour hydrates properly.
  • Cook the crêpes: Heat a non-stick skillet or crêpe pan over medium-high heat and lightly brush with butter. Pour a small ladleful of batter, swirl to coat the base thinly, and cook for 1–2 minutes until golden underneath. Flip and cook for 30 seconds more. Repeat to make about 8–10 crêpes. Set aside.


2. Prepare the Seafood Curry Filling

  • Aromatics: Melt butter or heat oil in a skillet over medium heat. Sauté the shallots and garlic until soft and fragrant.
  • Spice it: Stir in the curry powder and lemongrass, cooking for 30 seconds until the spices bloom in the fat.
  • Simmer sauce: Pour in the coconut milk and seafood broth, bringing it to a gentle simmer. Let it reduce slightly for 3–4 minutes, then season with fish sauce.
  • Cook seafood: Add the shrimp and scallops directly into the simmering curry sauce. Cook gently for just 3 to 4 minutes until opaque and cooked through. Stir in the cornstarch slurry if the sauce needs a thicker consistency to hold inside the crêpes. Remove from heat.


3. Fill and Fold

  • Lay each crêpe flat on a clean surface. Spoon a generous amount of the warm seafood curry filling down the centre or slightly off-centre.
  • Fold the sides over or roll them up neatly into cylinders (like traditional crêpes or blintzes). Place them seam-side down in a large, wide skillet or chafing dish.


4. The Savoury Flambé Finish

  • Melt the sauce base: In a separate small pan, melt the 3 tablespoons of butter with a pinch of curry powder and the citrus juice, whisking into a glossy emulsion. Pour this savoury sauce evenly over the folded crêpes in the skillet.
  • Flambé: Warm the skillet over medium heat until bubbling. Pour over the rum, brandy, or cognac. Carefully ignite the alcohol with a long match or kitchen torch, letting the flames dance across the pan until they extinguish naturally, leaving a deeply caramelised, glossy glaze over the crêpes.


5. Serve

  • Plate the warm crêpes immediately, spooning any remaining pan juices over the top. Garnish generously with fresh cilantro or Thai basil leaves.


💡 Chef's Tips

  • Seafood Timing: Do not overcook the seafood when preparing the filling; remember it will get a brief reheating when the assembled crêpes go back into the pan before the flambé step.
  • Choosing the Alcohol: While traditional Crêpes Suzette uses Grand Marnier or brandy, a quality rum or cognac pairs exceptionally well with coconut milk and yellow curry spices.
  • Make-Ahead Option: You can cook the crêpes and prepare the curry filling a day in advance, storing them separately in the refrigerator. Just assemble and warm through with the sauce right before serving.
