Fusion Recipe: Gula Melaka Treacle Tart
Gula Melaka Treacle Tart is a magnificent fusion of classic British baking and Southeast Asian sweetness. By substituting traditional golden syrup with rich, caramel-like Gula Melaka (palm sugar) syrup, this dessert transforms the comforting, sticky profile of a traditional treacle tart into an aromatic masterpiece. Encased in a buttery shortcrust pastry and served with a generous dollop of thick clotted cream, it offers a deeply satisfying, butterscotch-like depth with a subtle hint of coconut.
🥧 Ingredients
For the Pastry Base
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1 tbsp granulated sugar
- 1 large egg yolk
- 2–3 tbsp ice-cold water
For the Gula Melaka Filling
- 1 cup Gula Melaka syrup (or melted dark palm sugar syrup)
- 1 cup fine fresh breadcrumbs (soft, white bread)
- 1/2 cup golden syrup (or light corn syrup to balance and adjust consistency)
- Zest of 1 unwaxed lemon (plus 1 tbsp of fresh lemon juice to cut the sweetness)
- 1 tsp ground ginger (optional, adds a lovely warmth)
- 2 large eggs, lightly beaten
- 1/2 tsp vanilla extract
To Serve
- Cornish clotted cream or thick double cream
📝 Instructions & Method
1. Make and Blind Bake the Pastry
- Prepare the dough: In a bowl, rub the cold butter into the flour and sugar until the mixture resembles fine breadcrumbs. Mix in the egg yolk and ice-cold water just until the dough comes together. Shape into a disk, wrap, and chill for 30 minutes.
- Roll and line: Roll out the pastry on a lightly floured surface and use it to line a 9-inch tart tin. Chill the lined tin for another 15 minutes.
- Blind bake: Preheat your oven to 375°F (190°C). Line the pastry with parchment paper, fill with baking beans or rice, and bake for 15 minutes. Remove the paper and beans, then bake for another 5 minutes until the base is dry and lightly golden. Reduce oven temperature to 325°F (165°C).
2. Prepare the Gula Melaka Filling
- Combine ingredients: In a mixing bowl, combine the fine breadcrumbs, lemon zest, lemon juice, and ground ginger.
- Warm the syrups: In a small saucepan, gently warm the Gula Melaka syrup and golden syrup together just until fluid (do not boil). Pour the warm syrup mixture over the breadcrumb mixture and stir well.
- Add eggs: Allow the mixture to cool slightly, then stir in the lightly beaten eggs and vanilla extract until completely smooth and cohesive.
3. Bake the Tart
- Fill the crust: Pour the sticky Gula Melaka filling into the pre-baked pastry case.
- Bake: Place into the oven at 325°F (165°C) and bake for 30 to 35 minutes, or until the filling is just set with a slight wobble in the centre and the top is golden and caramelised.
4. Cool and Serve
- Allow the tart to cool completely so the filling firms up to its signature gooey texture.
- Slice into wedges and serve at room temperature with a generous dollop of clotted cream on top.
💡 Chef's Tips
- Sourcing Gula Melaka: For the best flavour, look for pure Gula Melaka blocks (palm sugar) from an Asian grocer and melt them down with a little water to make your own thick syrup, rather than using generic liquid caramel.
- Breadcrumbs Matter: Use soft white breadcrumbs rather than dry, hard breadcrumbs. Fresh breadcrumbs absorb the rich syrup mixture while keeping the filling soft and gooey rather than bready.
- Cutting the Richness: Don't skip the lemon juice and zest! Palm sugar and treacle are intensely sweet; the citrus cuts through the sugar to balance out the flavour profile.
