Grilled Corn with Lime and Chilli

Grilled Corn with Lime and Chilli

This vibrant, smoky side dish brings a burst of zesty Mexican-inspired street food flavour right to your table. Naturally sweet summer corn is charred to perfection, then elevated with fresh lime juice, smoky chilli powder, and a savoury dusting of nutritional yeast or cotija cheese for a wholesome, heart-smart treat.

Ingredients

  • 4 ears of fresh corn on the cob, husked and silks removed (rich in dietary fibre and carotenoids)
  • 1 tablespoon extra-virgin olive oil or avocado oil (heart-healthy monounsaturated fat)
  • 1 teaspoon chilli powder or smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 lime, cut into wedges (fresh juice adds bright acidity and vitamin C)
  • 2 tablespoons nutritional yeast or finely grated cotija cheese (adds a savoury, cheesy finish)
  • 2 tablespoons fresh cilantro, finely chopped
  • A pinch of sea salt and black pepper

Instructions & Method

  1. Preheat the Grill: Heat an outdoor grill or a heavy-duty grill pan over medium-high heat.
  2. Prep the Corn: Lightly brush each ear of husked corn with extra-virgin olive oil, ensuring they are evenly coated to prevent sticking and promote a nice char.
  3. Grill to Perfection: Place the corn directly on the grill. Cook for 10 to 12 minutes, turning frequently with tongs every 2 to 3 minutes, until the kernels are tender and develop attractive smoky char marks on all sides.
  4. Season: Remove the corn from the heat and transfer to a serving platter. Immediately squeeze fresh lime juice over the warm cobs.
  5. Spice and Garnish: Sprinkle the chilli powder, ground cumin, a small pinch of sea salt, and nutritional yeast (or cheese) evenly over the corn. Roll the cobs to coat well.
  6. Serve: Garnish with freshly chopped cilantro and serve warm with extra lime wedges on the side.

Tips for Success & Heart Health

  • Embrace Whole-Food Fibre: Corn provides valuable dietary soluble and insoluble fibre, which supports healthy digestion and helps bind to cholesterol to maintain optimal cardiovascular health.
  • Leverage Healthy Fats and Antioxidants: Brushing the corn with extra-virgin olive oil supplies heart-healthy fats, while chilli powder and fresh lime juice deliver antioxidants that help combat cellular damage and reduce inflammation.
  • Control Sodium Intake: Enhance the natural sweetness and smoky depth of the corn using spices, herbs, and fresh citrus rather than heavy salt, helping to maintain healthy blood pressure levels.
  • Keep Ingredients Wholesome: Opting for nutrient-dense toppings like nutritional yeast provides a rich source of B-vitamins and savoury flavour without adding excessive saturated fats, supporting long-term heart wellness.
