Eat Well Recipe: Grilled Shrimp Caesar (Yogurt Dressing)

Grilled Shrimp Caesar (Yogurt Dressing)

This refreshing, lighter twist on the classic Caesar salad swaps heavy mayonnaise and oil-based dressings for a creamy, protein-packed yogurt dressing. Paired with perfectly charred, lean grilled shrimp and crisp romaine lettuce, this wholesome dish delivers gourmet flavour while supporting optimal cardiovascular health.

Ingredients

  • 1 lb large shrimp, peeled and deveined (excellent source of lean protein and omega-3 fatty acids)
  • 2 heads romaine lettuce, washed, dried, and chopped
  • 1 tablespoon extra-virgin olive oil (for brushing shrimp, provides heart-healthy monounsaturated fats)
  • 1 teaspoon garlic powder or smoked paprika
  • Yogurt Caesar Dressing:
    • 1/2 cup plain low-fat or non-fat Greek yogurt (rich in protein and probiotics)
    • 1 tablespoon fresh lemon juice (adds bright citrus flavour and vitamin C)
    • 1 teaspoon Dijon mustard
    • 1 clove garlic, minced
    • 2 tablespoons freshly grated Parmesan cheese (optional, for savoury depth)
    • A pinch of sea salt and freshly cracked black pepper
  • Whole-grain croutons (optional, for a satisfying crunch)

Instructions & Method

  1. Prepare the Dressing: In a small mixing bowl, whisk together the plain Greek yogurt, fresh lemon juice, Dijon mustard, minced garlic, Parmesan cheese, sea salt, and black pepper until smooth and creamy. Set aside in the refrigerator to let the flavours meld.
  2. Season the Shrimp: Pat the shrimp completely dry with paper towels. Toss them lightly with extra-virgin olive oil, garlic powder, a pinch of salt, and black pepper.
  3. Grill the Shrimp: Preheat an outdoor grill or a grill pan over medium-high heat. Place the shrimp on the grill and cook for 2 to 3 minutes per side, just until pink, opaque, and slightly charred. Remove from heat.
  4. Toss the Salad: In a large salad bowl, combine the chopped romaine lettuce with about half of the yogurt Caesar dressing, tossing thoroughly to ensure every leaf is evenly coated.
  5. Assemble and Serve: Divide the dressed romaine among serving plates. Top each portion with the warm grilled shrimp, a handful of whole-grain croutons if desired, and an extra dollop or drizzle of the remaining yogurt dressing.

Tips for Success & Heart Health

  • Choose Lean Protein and Omega-3s: Shrimp provides high-quality lean protein with very little saturated fat, while also supplying valuable omega-3 fatty acids that help reduce systemic inflammation and support heart health.
  • Lighter, Heart-Smart Dressing: Replacing traditional heavy egg-and-oil Caesar dressings with a Greek yogurt base dramatically reduces saturated fat and calories while adding beneficial protein and gut-friendly probiotics.
  • Load Up on Fibre: Crisp romaine lettuce offers essential dietary fibre and hydration, helping to support healthy digestion and maintain optimal blood cholesterol levels.
  • Control Sodium: Utilise fresh lemon juice, garlic, and cracked black pepper to build robust, zesty flavour without relying on heavy amounts of salt, keeping your sodium intake low to support healthy blood pressure.
