Sweet Potato and Red Lentil Curry

Sweet Potato and Red Lentil Curry is a nourishing, plant-powered dish that combines tender roasted sweet potatoes and protein-rich red lentils simmered in a fragrant coconut and tomato broth. Infused with warming spices like turmeric, cumin, and ginger, this comforting meal offers a magnificent balance of complex carbohydrates, plant-based protein, and dietary fibre while supporting overall cardiovascular health and vitality.

Ingredients

  • Red Lentils: 1 cup split red lentils, rinsed and drained (cooks down quickly to create a rich, creamy base).
  • Sweet Potatoes: 2 medium sweet potatoes, peeled and diced into bite-sized cubes.
  • Aromatics & Spices: 1 medium yellow onion (diced), 3 cloves garlic (minced), 1 tablespoon fresh ginger (grated), 1 tablespoon curry powder, 1 teaspoon ground turmeric, and 1/2 teaspoon ground cumin.
  • Liquid Base: 1 can (14 oz) light coconut milk and 2 cups low-sodium vegetable broth.
  • Tomatoes: 1 can (14 oz) diced tomatoes (undrained) or 1 cup crushed tomatoes.
  • Greens: 2 cups fresh baby spinach or chopped kale, washed.
  • Healthy Cooking Fat: 1 tablespoon coconut oil or olive oil.
  • Optional Finishing: Fresh cilantro leaves and a squeeze of fresh lime juice.

Instructions & Method

  1. Sauté the Aromatics:

Heat the olive or coconut oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for 4–5 minutes until soft and translucent. Stir in the minced garlic, grated ginger, curry powder, turmeric, and cumin, cooking for about 1 minute until fragrant.
  2. Add Sweet Potatoes and Lentils:

Add the diced sweet potatoes and rinsed red lentils to the pot, stirring well to coat them in the aromatic spice mixture.
  3. Simmer the Curry:

Pour in the vegetable broth, diced tomatoes, and light coconut milk. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for 20–25 minutes, stirring occasionally, until the lentils are tender and the sweet potatoes are fork-soft.
  4. Incorporate Greens:

Remove the pot from the heat and stir in the baby spinach or kale, letting the residual heat wilt the greens into the curry for 2–3 minutes.
  5. Season and Serve:

Taste and adjust seasoning with a pinch of salt if needed. Finish with a squeeze of fresh lime juice and fresh cilantro before serving warm.

Tips for Success for Heart Health

Incorporating mindful preparation methods into this curry helps promote long-term cardiovascular health, manage cholesterol levels, and protect arterial function:

  • Leverage Soluble Fibre from Red Lentils:

Red lentils are packed with soluble fibre, which actively binds to cholesterol in the digestive tract and helps eliminate it from the body, thereby reducing LDL ("bad") cholesterol and supporting healthy blood vessels.
  • Harness Antioxidants and Potassium from Sweet Potatoes:

Sweet potatoes provide rich amounts of beta-carotene and potassium. Potassium helps regulate blood pressure by balancing sodium levels and easing tension within the arterial walls.
  • Incorporate Anti-Inflammatory Spices:

Turmeric contains curcumin, a powerful bioactive compound known for its anti-inflammatory and antioxidant properties, which help protect endothelial function and reduce cardiovascular disease risk.
  • Choose Light Coconut Milk for Healthy Fats:

Using light coconut milk provides a creamy texture with significantly less saturated fat than full-fat versions, helping maintain a healthy lipid profile while still delivering satisfying plant fats.
  • Keep Sodium Levels Low:

Opting for low-sodium vegetable broth and avoiding excessive added salt helps keep blood pressure in a healthy range, easing the workload on the heart.
