Eat Well Recipe: Tofu Scramble with Turmeric and Kale
Tofu Scramble with Turmeric and Kale
This vibrant, plant-powered breakfast is packed with heart-healthy nutrients, antioxidants, and anti-inflammatory compounds. It’s a wonderful savoury alternative to traditional scrambled eggs that comes together in under 20 minutes.
Ingredients
- 1 block (14–16 oz) extra-firm tofu, drained and pressed for 10 minutes
- 2 cups fresh kale, stems removed and chopped or torn into bite-sized pieces
- 1 medium shallot (or small red onion), finely diced
- 2 cloves garlic, minced
- 1/2 teaspoon ground turmeric (adds a golden hue and powerful curcumin antioxidants)
- 1/4 teaspoon ground cumin
- 1/4 teaspoon black pepper (essential for enhancing turmeric absorption)
- 2 tablespoons nutritional yeast (for a savoury, cheesy depth and B-vitamins)
- 1 tablespoon extra-virgin olive oil (heart-healthy monounsaturated fat)
- 1 tablespoon low-sodium tamari or soy sauce
- Optional finish: A pinch of kala namak (black salt) for an authentic eggy flavour, and a squeeze of fresh lemon juice.
Instructions & Method
- Prep the Tofu: Pat the drained tofu dry with a clean kitchen towel. Crumble it into a bowl using your hands or a fork until it resembles the texture of scrambled eggs—some larger chunks are fine for a realistic texture.
- Sauté Aromatics: Heat the extra-virgin olive oil in a skillet over medium heat. Add the diced shallot and cook for 2 to 3 minutes until softened and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Spice the Pan: Add the ground turmeric, cumin, and black pepper directly into the aromatic oil. Stir constantly for about 30 seconds to toast the spices and unlock their aromatic compounds.
- Wilt the Greens: Toss the chopped kale into the skillet. Cook for 1 to 2 minutes, stirring frequently, until the kale is bright green and just wilted.
- Scramble the Tofu: Add the crumbled tofu to the pan along with the tamari and nutritional yeast. Toss everything together thoroughly so the golden spices evenly coat the tofu.
- Heat Through: Cook for 5 to 7 minutes, stirring occasionally, until the tofu is heated completely through and has absorbed the flavours. If the pan looks a bit dry, splash a tablespoon of water or low-sodium vegetable broth.
- Serve: Remove from heat, finish with a squeeze of fresh lemon juice or a pinch of black salt if desired, and serve warm.
Tips for Success & Heart Health
- Boost Absorption with Black Pepper: Always pair turmeric with black pepper. Piperine in black pepper increases curcumin absorption by up to 2,000%, maximising its powerful anti-inflammatory benefits.
- Incorporate Healthy Fats: Cooking with unrefined extra-virgin olive oil provides heart-healthy monounsaturated fats that support healthy cholesterol levels.
- Keep Sodium in Check: Use low-sodium tamari and rely on herbs, spices (like garlic, cumin, and nutritional yeast), and a squeeze of citrus to build rich flavour without adding excess sodium, which helps maintain healthy blood pressure.
- Embrace Leafy Greens: Kale is rich in potassium, fibre, and antioxidants, all of which contribute to optimal cardiovascular function and help protect against heart disease.
