Fusion Recipe: Bilimbi & Passionfruit Tart

Bilimbi & Passionfruit Tart

The Bilimbi & Passionfruit Tart is a refreshing fusion dessert that celebrates two of the southern hemisphere's most vibrant tropical fruits. By blending the intense, crisp acidity of Southeast Asian bilimbi (kamias) with the fragrant, floral sweetness of Australian passionfruit, this tart delivers a striking balance of tangy and sweet notes. Cradled in a rich, buttery sweet shortcrust pastry shell and set into a silky curd, each slice offers a luscious, bright finish that rejuvenates the palate.

Ingredients List

For the Sweet Shortcrust Pastry (Pâte Sucrée):

  • All-Purpose Flour: 200 g (1.5 cups)
  • Unsalted Butter: 110 g (1/2 cup), cold and diced into small cubes
  • Powdered Sugar: 60 g (1/2 cup)
  • Egg: 1 large egg yolk (cold)
  • Cold Water: 1–2 tbsp (as needed)
  • Fine Sea Salt: 1/4 tsp

For the Bilimbi & Passionfruit Curd Filling:

  • Fresh Bilimbi (Kamias): 150 g (approx. 10–12 fruits, trimmed and sliced)
  • Passionfruit Pulp: 120 ml (1/2 cup), fresh passionfruit pulp (seeds reserved for garnish or strained)
  • Granulated Sugar: 150 g (3/4 cup)
  • Eggs: 3 large whole eggs + 2 large egg yolks
  • Unsalted Butter: 100 g (1/2 cup), unsalted butter cubed at room temperature
  • Water: 60 ml (1/4 cup)

Garnish:

  • Fresh passionfruit seeds with pulp
  • Thinly sliced fresh bilimbi or candied bilimbi rounds
  • Dusting of powdered sugar or fresh mint leaves

Step-by-Step Instructions

Step 1: Prepare & Blind-Bake the Tart Shell

  1. Make Dough: In a food processor, pulse flour, powdered sugar, and sea salt. Add cold cubed butter and pulse until the mixture resembles coarse breadcrumbs.
  2. Bind: Add the egg yolk and 1 tbsp of cold water. Pulse just until dough comes together. Form into a disc, wrap in plastic, and chill for at least 30 minutes.
  3. Roll & Fit: Roll dough on a lightly floured surface to 3 mm thickness. Press into a 23 cm (9 in) fluted tart pan with a removable bottom. Dock the base with a fork and chill for another 20 minutes.
  4. Blind Bake: Line with parchment paper, fill with pie weights or dried beans, and bake at 180 C (350 F) for 15 minutes. Remove weights and paper, then bake for an additional 8 to 10 minutes until golden. Cool completely.

Step 2: Extract Bilimbi & Passionfruit Juice

  1. Bilimbi Puree: Combine sliced bilimbi and 60 ml water in a saucepan over medium heat. Simmer for 6–8 minutes until the fruit softens completely. Puree with an immersion blender and pass through a fine-mesh sieve to yield a smooth, concentrated bilimbi juice.
  2. Combine Juices: Measure 80 ml of the bilimbi juice and blend with 120 ml of passionfruit pulp.

Step 3: Cook the Fruit Curd

  1. In a heatproof bowl set over a pot of gently simmering water (double boiler), whisk together the eggs, egg yolks, sugar, and the blended bilimbi-passionfruit liquid.
  2. Whisk continuously over medium-low heat for 10 to 12 minutes until the mixture thickens to a rich, custard-like consistency (coating the back of a spoon, approx. 80 C).
  3. Remove from heat. Whisk in room temperature cubed butter one piece at a time until completely emulsified and glossy.

Step 4: Assemble & Chill

  1. Pour the warm curd directly into the pre-baked tart shell, smoothing the top with an offset spatula.
  2. Bake at 160 C (325 F) for 8 to 10 minutes just to set the curd (the centre should still have a slight jiggle).
  3. Cool at room temperature, then chill in the refrigerator for at least 3 to 4 hours to fully set.
  4. Spoon fresh passionfruit seeds and raw/candied bilimbi slices over the top before serving.

Pro Tips for Success

  • Taming Bilimbi Acidity: Bilimbi is naturally very sharp; simmering it briefly before pureeing softens its raw bite while preserving its unique citrus-apple flavour profile.
  • Smooth Curd Texture: Always pass your cooked curd through a fine-mesh strainer before pouring it into the shell to catch any stray egg bits and ensure an ultra-silky mouthfeel.
  • Preventing Sogginess: Brush the inside of the baked tart shell with a thin layer of melted white chocolate or whisked egg white during the last 2 minutes of blind baking to seal the pastry crust against humidity.
