Fusion Recipe: Chotpoti-Japchae Salad
Chotpoti-Japchae Salad is an exciting, vibrant fusion that brings together the tangy, spicy street food flavours of Bangladeshi Chotpoti with the sleek, comforting texture of Korean Japchae. Chewy glass noodles and tender yellow peas (or chickpeas) are tossed in a lip-smacking dressing made from sour tamarind, rich sesame oil, toasted cumin, and roasted chilli. Every bite offers a refreshing contrast of textures—soft noodles, hearty legumes, and crisp fresh vegetables—bursting with a punchy balance of sour, savoury, nutty, and fiery notes.
Ingredients
For the Salad Base:
- Glass Noodles (Dangmyeon): 100g (3.5 oz) Korean sweet potato starch noodles
- Yellow Peas or Chickpeas: 1 cup cooked (dried white/yellow peas soaked and boiled, or canned chickpeas, drained)
- Boiled Potato: 1 medium, boiled and cubed into bite-sized pieces
- Cucumber: ½ medium, cut into thin matchsticks
- Carrot: 1 small, julienned
- Red Onion: ½ small, thinly sliced
- Fresh Cilantro (Coriander): ¼ cup chopped
For the Tamarind-Sesame Dressing:
- Tamarind Pulp/Concentrate: 2 tablespoons (softened in 3 tablespoons warm water)
- Soy Sauce: 1 ½ tablespoons
- Toasted Sesame Oil: 1 tablespoon
- Gour/Brown Sugar or Honey: 1 tablespoon
- Chotpoti Masala or Roasted Cumin & Red Chilli Powder: 1 teaspoon
- Black Salt (Kala Namak): ½ teaspoon (or regular salt to taste)
- Garlic: 1 small clove, finely grated
For the Toppings & Garnish:
- Hard-Boiled Egg: 1, grated or sliced
- Green Chilies: 1–2, finely chopped (adjust for heat)
- Toasted Sesame Seeds: 1 teaspoon
- Crushed Papri/Crackers or Crispy Shallots: ¼ cup (for extra crunch)
Instructions & Method
- Prepare the Glass Noodles:
Bring a pot of water to a boil. Add the Korean glass noodles and cook for 6–7 minutes until tender and translucent. Drain immediately and rinse under cold running water to stop the cooking. Toss noodles with ½ teaspoon of sesame oil to prevent sticking, then cut into manageable 4–5 inch strands with kitchen shears. - Whisk the Fusion Dressing:
In a small bowl, whisk together the tamarind pulp liquid, soy sauce, toasted sesame oil, sweetener, chotpoti masala (or roasted cumin/chilli), black salt, and grated garlic until smooth and well combined. - Assemble the Salad:
In a large mixing or salad bowl, combine the cooked glass noodles, cooked yellow peas (or chickpeas), cubed potato, julienned cucumber, carrot, red onion, and fresh cilantro. - Dress and Toss:
Pour the tamarind-sesame dressing over the salad ingredients. Toss thoroughly using tongs or hands until the glass noodles and vegetables are evenly coated in the aromatic sauce. - Garnish and Serve:
Transfer the salad to a serving platter. Top generously with grated hard-boiled egg, fresh green chilies, toasted sesame seeds, and crushed papri or crispy shallots for texture. Serve immediately at room temperature or slightly chilled.
Tips for Best Results
- Don't Skip the Black Salt: Black salt (kala namak) gives that distinct, authentic street-food Chotpoti tang that elevates the salad's flavour.
- Keep Noodles Chewy: Rinsing the sweet potato starch noodles in cold water instantly stops them from becoming mushy and preserves that signature springy Japchae bounce.
- Add Crunch Right Before Serving: Wait to sprinkle crushed papri, crackers, or crispy shallots on top until the absolute last moment so they stay delightfully crisp.
