Fusion Recipe: Egg Tart Pumpkin Pie
A Harmonious East-Meets-West Dessert Celebration
This cross-cultural pastry brings together the best of two iconic dessert traditions: the warm, aromatic spiced custard of a classic American pumpkin pie and the crisp, shatteringly flaky, multi-layered crust of a Hong Kong-style egg tart (dan tat). The filling uses real pumpkin puree enriched with condensed milk and warm autumn spices, creating a silky custard that bakes to perfection inside a laminated lard-and-butter pastry shell. Topped with a cloud of light whipped cream infused with whole star anise, this dessert offers an elegant balance of buttery crunch, velvety spiced pumpkin, and floral aromatic finish.
Ingredients List
For the Flaky Chinese Egg Tart Shells (Laminated Pastry):
- Water Dough Layer:
- 120 g (1 cup) all-purpose flour
- 15 g (1 tbsp) unsalted butter, softened
- 1 tbsp granulated sugar
- 55 ml cold water
- Oil Dough Layer:
- 90 g (3/4 cup) cake flour or all-purpose flour
- 60 g cold unsalted butter (or leaf lard), cubed
For the Pumpkin Pie Custard Filling:
- Pumpkin Puree: 180 g (3/4 cup) canned or roasted pumpkin puree (drained)
- Sweetened Condensed Milk: 120 g (1/3 cup)
- Egg: 1 large egg + 1 egg yolk (room temperature)
- Evaporated Milk: 60 ml (1/4 cup)
- Spices: 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground nutmeg, pinch of ground cloves
- Vanilla & Salt: 1/2 tsp vanilla extract, 1/8 tsp fine sea salt
For the Star Anise Whipped Cream:
- Heavy Cream: 200 ml cold heavy whipping cream (35% + fat)
- Star Anise: 3 whole star anise pods, lightly crushed
- Powdered Sugar: 2 tbsp powdered sugar
- Vanilla: 1/2 tsp pure vanilla extract
Step-by-Step Baking Instructions
Step 1: Infuse the Whipped Cream (Advance Prep)
- In a small saucepan over low heat, combine heavy whipping cream and crushed whole star anise. Warm until steamy (do not boil), then remove from heat.
- Cover and steep in the refrigerator for at least 2 hours (or overnight) to infuse the anise essential oils.
- Strain out the star anise pods and keep the cream thoroughly chilled until ready to whip.
Step 2: Prepare the Flaky Egg Tart Crust
- Water Dough: Mix all-purpose flour, softened butter, sugar, and cold water until a smooth dough forms. Wrap and chill for 20 minutes.
- Oil Dough: Combine cake flour and cubed cold butter/lard, rubbing together until a smooth paste forms.
- Lamination (3-Fold Method):
- Roll the Water Dough into a rectangle. Place the Oil Dough in the centre and fold the edges over to enclose it completely.
- Roll out into a long rectangle and complete a letter fold (fold top third down, bottom third up). Rest in the fridge for 15 minutes.
- Repeat rolling and letter-folding twice more to create distinct, delicate pastry layers.
- Form Tart Shells: Roll the laminated dough out to 3 mm thickness. Cut circles using a fluted cutter and gently press into metal egg tart tins or a muffin tin, pressing upward slightly above the rim. Chill the lined tins for 20 minutes.
Step 3: Mix the Pumpkin Custard
- In a medium bowl, whisk together pumpkin puree, sweetened condensed milk, egg, egg yolk, and evaporated milk until completely smooth.
- Whisk in ground cinnamon, ginger, nutmeg, cloves, vanilla extract, and salt.
- Pass the pumpkin custard mixture through a fine-mesh sieve to eliminate air bubbles and ensure a silky egg-tart finish.
Step 4: Bake the Tarts
- Preheat your oven to 200 C (390 F).
- Pour the strained pumpkin filling into each chilled pastry shell, filling about 85% full.
- Bake at 200 C for 10 minutes, then reduce the oven temperature to 170 C (340 F) and bake for an additional 12 to 15 minutes until the crust is golden-brown and the filling is set with a subtle jiggle in the centre.
- Cool completely in the tins on a wire rack before unmoulding.
Step 5: Whip & Garnish
- Whip the cold star anise-infused heavy cream with powdered sugar and vanilla extract until medium-stiff peaks form.
- Pipe or dollop a swirl of star anise cream onto each cooled pumpkin pie egg tart. Garnish with a dust of ground cinnamon or a small piece of star anise pod.
Baking Tips for Success
- Prevent Puffing/Bubbling: Keep the oven temperature moderate during the second half of baking. High heat can cause pumpkin custard to swell and collapse, creating cracks on top.
- Lamination Coldness: Keep the oil-water dough cold throughout the rolling process. If the butter melts into the flour during rolling, you will lose the signature multi-layered flaky crunch of the Chinese egg tart shell.
- Infusion Time: Do not skip chilling the star anise cream after heating; heavy cream must be under 4 C to whip efficiently to stable peaks.
- Unmoulding Ease: Use flexible metal egg tart tins or aluminium foil cups; gently press the top edges inward to pop the warm tarts out without breaking the delicate flaky crust.
