Fusion Recipe: Sopaipilla Mini-Waffles

Sopaipilla Mini-Waffles

Sopaipilla Mini-Waffles are a playful and innovative fusion treat that bridges traditional Chilean street food with the classic European waffle shape. Traditional Chilean sopaipillas are savoury, golden fritters made with a yeast or baking powder dough enriched with mashed pumpkin or squash (zapallo), traditionally served warm with pebre (a vibrant Chilean salsa of tomatoes, cilantro, garlic, and chilli).

By pressing the spiced pumpkin dough into a mini waffle iron rather than deep-frying it traditionally, this recipe yields crispy, golden pockets with a tender, cake-like interior. Finished with a dusting of sweet powdered sugar infused with zesty pebre spices (such as cumin, smoked chilli, and cilantro dust), it creates a fascinating and delightful interplay of sweet, savoury, and spicy notes.

Ingredients

  • For the Waffle Dough:
    • 1 cup cooked pumpkin or squash puree (mashed smooth)
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 3 tablespoons melted butter or lard
    • 1/4 cup warm milk or water
  • For the Pebre-Spiced Dusting:
    • 1/2 cup powdered sugar
    • 1/4 teaspoon ground cumin
    • 1/4 teaspoon smoked chilli powder or merkén (traditional Chilean smoked chilli)
    • A pinch of fine salt and dried cilantro flakes (optional)

Instructions & Method

  1. Mix the Wet Ingredients: In a large mixing bowl, combine the smooth pumpkin puree, melted butter (or lard), and warm milk. Stir until thoroughly blended.
  2. Form the Dough: Whisk together the all-purpose flour, baking powder, and salt in a separate bowl. Gradually add the dry mixture to the pumpkin mixture, kneading gently until a soft, pliable dough forms.
  3. Portion the Dough: Divide the dough into small, bite-sized balls (roughly the size of a walnut) to fit a mini waffle maker.
  4. Cook in the Waffle Iron: Preheat your mini waffle iron and lightly grease it with oil or butter. Place a dough ball in the centre of the grid, close the lid firmly, and cook for 3 to 4 minutes until golden brown and crispy on the outside. Repeat with the remaining dough.
  5. Prepare the Spiced Sugar: In a small bowl, whisk together the powdered sugar, ground cumin, smoked chilli powder (or merkén), and a tiny pinch of salt until well combined.
  6. Dust and Serve: While the mini waffles are still warm, lightly dust them with the pebre-spiced powdered sugar. Serve immediately with a side of traditional tomato pebre or maple syrup for dipping.

Expert Tips

  • Embrace the Merkén: If you can find authentic Chilean merkén (smoked goat's horn chilli mixed with toasted coriander and salt), use it in the dusted sugar for a deeply authentic smoky and spicy kick.
  • Pumpkin Moisture: Ensure your pumpkin puree is relatively dry (well-drained if using canned, or roasted rather than boiled if fresh) so your waffle dough doesn't turn out too sticky or dense.
  • Serving Contrast: The magic of this dish lies in the contrast between the savoury squash base and the sweet-spiced dusting—don't shy away from serving them with a side of fresh, tangy salsa to lean into their street-food origins!
