Fusion Recipe: Tteok-Patishapta

Tteok-Patishapta

Tteok-Patishapta is a delicious fusion dessert that combines the silky, chewy texture of Korean rice cakes (tteok) with the sweet, aromatic comfort of Bengal’s classic Patishapta crepes. The thin, slightly springy rice wrapper encases a luxurious filling of caramelised grated coconut, rich cardamom-scented jaggery, and condensed milk. Every bite offers a delightful contrast between soft, chewy rice batter and a warm, fragrant, gooey centre with a subtle nutty crunch.

Ingredients

For the Rice Crepe Batter (Tteok Base):

  • Glutinous Rice Flour (Mochiko): 1 cup
  • All-Purpose Flour or Fine Semolina: 2 tablespoons (helps hold shape)
  • Milk or Coconut Milk: 1 to 1 ¼ cups (warmed)
  • Sugar: 1 tablespoon
  • Salt: A tiny pinch
  • Vegetable Oil or Ghee: For lightly greasing the pan

For the Coconut-Jaggery Filling (Kheer/Pur):

Instructions & Method

1. Prepare the Batter:

  1. In a medium bowl, whisk together the glutinous rice flour, all-purpose flour, sugar, and salt.
  2. Slowly pour in the warm milk while whisking continuously to prevent lumps.
  3. The batter should be smooth, thin, and pourable (similar to traditional crepe batter). Let it rest for 15–20 minutes so the rice flour hydrates fully.

2. Prepare the Filling:

  1. Heat a non-stick pan over medium-low heat. Add the grated coconut and date palm jaggery (or brown sugar).
  2. Stir continuously as the jaggery melts and coats the coconut evenly.
  3. Stir in the condensed milk (or mawa) and cardamom powder. Cook for 5–7 minutes until the mixture thickens, becomes slightly sticky, and releases a sweet, rich aroma.
  4. Fold in the chopped nuts if using. Remove from heat and allow the filling to cool slightly.

3. Cook the Crepes & Roll:

  1. Heat a non-stick skillet or flat griddle over low to medium-low heat. Lightly grease the surface with ghee or vegetable oil using a paper towel.
  2. Pour a small ladleful of batter into the centre of the pan and quickly swirl it in a circular motion to form a thin, round crepe.
  3. Cover the pan with a lid for 1 to 2 minutes to let the rice batter steam and cook through (it will turn slightly translucent and pliable without needing to be flipped).
  4. Place 1 to 2 tablespoons of the coconut-jaggery filling along one edge of the crepe.
  5. Using a spatula, gently fold and roll the crepe over the filling into a neat log or cylinder, pressing lightly so the chewy edges seal.
  6. Transfer to a serving plate and repeat with the remaining batter and filling.

Tips for Best Results

  • Maintain Low Heat: Glutinous rice batter can scorch or turn rubbery quickly if cooked on high heat. Keep the flame low so the crepe steams into a soft, chewy texture.
  • Don't Overfill: Keep the filling spread in a thin line along the edge so the delicate rice crepe rolls easily without tearing.
  • Serve Warm or Chilled: Tteok-Patishapta tastes amazing warm right off the pan, but cooling it for 20 minutes enhances its chewy, rice-cake-like texture!
